The secret is in the sauce. A luscious mix of garlic, butter, cherry tomatoes, spinach, heavy cream, and Parmesan comes together to create something truly special. Ingredients (Serves 4)
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tsp dried oregano
- Salt and pepper, to taste
- 2 Tbsp olive oil
- 2 Tbsp butter
- 3 cloves garlic, minced
- 1 cup cherry tomatoes (or sun-dried tomatoes)
- 2 cups baby spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Lemon wedges, for serving
Directions
- Sear the Chicken
Heat olive oil in a large skillet over medium heat. Season the chicken with salt, pepper, and oregano, then sear each side for about 8 minutes, until golden and cooked through. Transfer to a plate and set aside. - Build the Sauce
In the same skillet, melt butter and stir in the garlic until fragrant (about 1 minute). Add cherry tomatoes and cook until they begin to burst. Stir in the spinach and cook until wilted. - Add the Creaminess
Pour in the heavy cream and Parmesan, stirring gently until the sauce begins to thicken, about 3 minutes. Return the chicken to the skillet, coat it in the sauce, and let it simmer for another 5 minutes. - Serve and Enjoy
Plate the chicken and spoon the sauce generously over the top. Finish with a squeeze of lemon for brightness.
