Ingredients:
- 20 oz, boneless, raw [567 g] Salmon
- 2 sprigs [0.4 g] Dill (Chopped)
- 2 dash [0.8 g] Salt (To taste)
- 2 lime yields [76 g] Lime Juice
- 1 onion (small) [148 g] Red Onions (Diced)
- 2 mango [414 g] Mango (Small mango peeled and diced)
- 4 tbsp [4 g] Cilantro (Coriander) (Chopped)
- 6 cup [120 g] Arugula (Rocket)
- 1 tbsp [14 g] Olive Oil
- 2 tbsp [17.6 g] Dry Roasted Sunflower Seeds (withSalt Added)
Directions:
- Preheat oven to 375 degrees F (109 degrees C).
- Season salmon with fresh chopped dill, salt, and half of the lime juice.
- Bake for 20 minutes, or until internal temperature reaches about 165 degrees F (74 degrees C).
- While the salmon bakes, add diced mango, redonion, cilantro, remaining lime juice, and a dash ofsalt to a bowl and mix well. Refrigerate for 10-15minutes.
- Toss arugula with olive oil and sunflower seeds and add to your plate.
- When salmon is done cooking, add this to the plateand top with mango salsa.
