Zucchini season is coming! This is one of my favorite easy, go-to recipes when they’re in abundance—simple, fresh, and really nourishing.
These zucchini boats are stuffed with lemon hummus and topped with roasted tomatoes, pesto, and feta for a light but satisfying meal that feels just right for summer.
You’re getting plant-based protein and fiber from the hummus, hydration and nutrients from the zucchini, and healthy fats to help keep blood sugar stable. It’s the kind of balanced, anti-inflammatory plate that supports energy, digestion, and hormone health—without overthinking it.
What you’ll need (serves 2):
- 1 medium zucchini
- 2 tbsp lemon hummus
- 2 tbsp roasted tomatoes
- 1 tbsp pesto
- 2 tbsp crumbled feta
- 1 tbsp olive oil
- Salt & pepper
Quick how-to:
Slice zucchini in half and scoop out the center to make your “boats.” Drizzle with olive oil, season, and grill face down for about 10–15 minutes until tender.
Transfer to a stable surface so you can fill it with hummus, top it with tomatoes, pesto, and feta, then return it to the grill (face up now) for a few minutes until warmed through.
That’s it—super easy.
Enjoy as is or pair with grilled chicken or fish if you want to add more protein. They also reheat really well for leftovers.
