Pumpkin season is here, and I’m all about the cozy fall vibes. But instead of grabbing a 400-calorie pumpkin spice latte full of sugar, why not get that same flavor in a way that actually fuels your day?
As a health and fitness coach who works primarily with busy moms — and as one myself — I know how easy it is for breakfast to slip through the cracks on hectic mornings. Regardless, I make it a priority, and I encourage my clients to do the same.
This Pumpkin Oatmeal Bake delivers all the right pieces: 27 grams of protein, 9 grams of fiber, and hearty oats for quality carbs that sustain your energy throughout the day — all for about the same calories as that latte.
It’s easy to prep ahead on the weekend, reheats in seconds, and makes you feel like you’re already winning the day before you’ve even left the house. Plus, if you are a mom, you’ll love that the base of this recipe is 100% kid-approved, and you can layer on the extra toppings to hit your own goals.
This cozy, make-ahead breakfast is kid-friendly and mom-approved.
Ingredients (Serves 8)
- 3 cups old-fashioned rolled oats (use certified gluten-free if needed)
- 1 ½ tsp pumpkin pie spice
- ½ tsp cinnamon
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1 cup pumpkin purée (not pumpkin pie filling)
- 1 ¼ cups plain Greek yogurt (nonfat or 2%)
- 2 large eggs + 2 egg whites
- ½ cup Fairlife 2% milk (or milk of choice)
- ⅓ cup maple syrup or honey
- 1 tsp vanilla extract
- 3 Tbsp hemp hearts
Directions
Preheat oven to 350°F (175°C). Lightly grease an 8×8 or 9×9 baking dish.
In a large bowl, mix oats, pumpkin pie spice, cinnamon, baking powder, and salt.
In another bowl, whisk pumpkin purée, Greek yogurt, eggs + egg whites, milk, maple syrup, and vanilla until smooth.
Pour wet ingredients into dry and stir until just combined. Fold in hemp hearts if using.
Spread evenly in the prepared dish.
Bake for 40–45 minutes, until the edges are golden and the center is set. If it browns too quickly, tent with foil for the last 10 minutes.
Let cool at least 15 minutes before slicing. Store leftovers in the fridge up to 5 days.
🍽️ Serving Hack for More Protein and Fiber
Top each slice with:
- ½ cup nonfat Greek yogurt
- ½ Tbsp chia seeds (stirred into yogurt)
- 1 Tbsp walnuts
- 1 tsp maple syrup
- Sprinkle of pumpkin pie spice

For that classic buttery taste: brush 1 Tbsp melted butter over the top right after baking. It adds only ~12 calories and ~1.5g fat per serving, but makes the whole kitchen smell like fall.
